Soft Molasses Gingerbread
Ingredients
1 cup molasses
1 cup sour milk
2-1/3 cups flour
1-3/4 tsp. baking soda
1/4 cup melted shortening
2 tsp. ginger
1/2 tsp. salt
Directions
Mix the baking soda with the sour milk, then add to the molasses. Sift the dry ingredients together and combine both mixtures. Add the shortening and beat thoroughly.
Pour into buttered muffin tins and bake at 350 degrees for 20 to 30 minutes or until done.
Serve with whipped cream, sweetened and mixed with crushed pineapple, if desired.
