Sponge Candy
Ingredients
1 cup sugar
1 cup dark corn syrup
1 tbsp. vinegar
1 tbsp. baking soda
Directions
Combine sugar, corn syrup and vinegar in a heavy saucepan. Cook over medium heat, stirring constantly until sugar dissolves. Continue cooking without stirring until mixture reaches 300 degrees on a candy thermometer or until a little of the mixture dropped in cold water becomes very brittle. Remove candy from heat. Quickly stir in the baking soda and mix well.
Pour into a lightly buttered 9x9x2-inch square pan. Do not spread as candy will spread itself. Cool. Break into pieces. Makes about one pound of candy.
