Strawberry Cheesecake
Ingredients
1 envelope unflavored gelatin
1/2 cup cold water
2 eggs
1 cup sugar
2 tbsp. grated lemon peel
1 pint large curd cottage cheese
1 cup whipping cream, whipped
1 cup sour cream
1 graham cracker crust (directions below)
strawberry topping (directions below)
Directions
Soften the gelatin in the cold water.
Beat the eggs and sugar together, then add the lemon peel. Place the egg mixture in a double boiler and cook until hot. Add the softened gelatin to the hot egg mixture and stir until well dissolved. Remove from heat and allow to cool.
Press the cottage cheese through a strainer and add the whipped cream and sour cream. Fold thoroughly into the egg mixture and gently mix until smooth. Turn the mixture into the graham cracker crust and top with the strawberry topping.
Graham Cracker Crust
Ingredients
1-1/4 cups graham cracker crumbs
1/4 cup sugar
6 tbsp. butter
Directions
Mix the graham cracker crumbs with the sugar. Mix the butter with the crumb mixture and line the bottom and sides of a 10x6-inch baking pan with the mixture to form a crust.
Strawberry Topping
Ingredients
1/2 cup sour cream
1 tbsp. strawberry preserves
Directions
Mix the sour cream with the strawberry preserves until well blended.
