Strawberry Pie
1 qt. plus 1 cup fresh strawberries 3/4 cup granulated sugar 1/2 cup water 1 1/2 tbsp. cornstarch 2 tbsp. cold water pinch of salt baked pie shell whipped cream
Crush 1 cup berries. Heat sugar and 1/2 cup water until sugar is dissolved. Combine with crushed berries. Add salt and bring to a boil. Mix the cornstarch with 2 tbsp. cold water and add to hot mixture, stirring constantly. Cook slowly until mixture becomes very thick and clear, about 10 minutes. Cool slightly then pour over the 1 quart of berries arranged in baked pie shell.
Set in refrigerator to chill, top with whipped cream.
