Strawberry Thumbprint Cookies
2/3 cup butter 1/2 cup strawberry preserves 1/4 tsp. lemon juice 3/4 cup coconut, flaked or shredded 2 cups quick oats, uncooked strawberry preserves
Beat butter until creamy. Add preserves and lemon juice, beating until light and fluffy. Stir in coconut and oats. Shape into balls. Press center of each with thumb and fill with preserves. Refrigerate. Makes 3 dozen.
