Super Meringue
1 tbsp. cornstarch 2 tbsp. cold water 1/2 cup boiling water 3 egg whites 6 tbsp. sugar pinch of salt 1 tsp. vanilla
For lemon pie use 1/4 tsp. grated lemon peel instead of vanilla.
Dissolve cornstarch in cold water. Stir into boiling water and cook, stirring until mixture boils and thickens. Cool completely. Beat egg whites until fluffy using high speed of an electric mixer. Gradually add sugar, salt and vanilla while continuing to beat until mixture is thick and glossy. Turn mixer to medium speed and add cornstarch mixture gradually while continuing to beat. When smooth, spread on pie filling, making sure it is sealed to edges of pie. Bake at 350 degrees for 20 minutes or until evenly browned. Cool slowly away from drafts.
