Swedish Apple Cake
Ingredients
1-1/2 cup sugar
1/2 cup shortening
2 eggs
3 cups apples, peeled and diced (about 4 medium Jonathan or Winesap)
1/2 cup chopped walnuts
1-1/2 cups sifted flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
pinch salt
dash cloves
1 tsp. vanilla
Directions
Cream the sugar and shortening together. Add the eggs, salt and vanilla. Sift the spices and baking soda into the flour and add to the creamed mixture. Add the diced apples and chopped walnuts. Transfer the batter to a lightly greased 9x9x2-inch square baking pan.
Bake at 350 degrees for 35 minutes. While the cake is baking make the topping.
After the cake has baked for 35 minutes, remove the cake from the oven and spread the topping on top of the cake. Return the cake to the oven and bake for 25 minutes longer. Top with whipped cream, if desired, when serving.
Topping
Ingredients
3 tbsp. butter or margarine
3 tbsp. milk
2 tbsp. brown sugar
Directions
Mix the brown sugar with softened butter or margarine. Mix in the milk until smooth.
