Sweet and Sour Meatballs
Ingredients
1-1/2 lb. ground chuck
1 medium onion, chopped
1 egg
1/3 cup packaged bread crumbs
1/3 cup milk
1/2 tsp. salt
1/8 tsp. pepper
3 tbsp. soy sauce
1 green pepper, seeded and sliced
1/2 cup sugar
2 tbsp. cornstarch
1 can (1 lb. 4 oz.) pineapple chunks in pineapple juice, undrained
1/4 cup vinegar
Directions
Combine ground chuck, onion, egg, bread crumbs, milk, salt, pepper and 1 tablespoon of the soy sauce in a large bowl. Mix well. Shape into about 24 meatballs that are 1-1/2 inches in diameter. Arrange in a 11-3/4 x 7-1/2 x 1-3/4 inch glass baking dish. Cover with waxed paper. Cook, covered, in a microwave oven for 10 to 11 minutes, rotating the dish once. Remove from oven. Spoon off drippings or use bulb baster. Sprinkle with green pepper slices and pineapple chunks.
Combine sugar, cornstarch, remaining soy sauce, pineapple juice and vinegar in a 4-cup glass measuring cup and stir well. Place uncovered in microwave for 6 to 7 minutes or until mixture is bubbly and thickened, stirring several times. Pour sauce over meatballs, mixing lightly to coat evenly. Return meatballs and sauce in baking dish to oven for 4 to 5 minutes or until heated through. Serve over hot, cooked rice.
