Sweet Pastry Crust
1-3/4 cups sifted all purpose flour 1/3 cup sifted powdered sugar 1/2 tsp. salt 1/2 cup butter 1 egg 1/2 tsp. grated lemon rind
Combine flour, powdered sugar and salt. With a pastry blender cut in the butter into the flour mixture until like coarse crumbs. Add beaten egg and grated lemon rind. Cut in until evenly blended. Shape into a ball with your hands. Chill 15 minutes before rolling out. Roll to a 1/8 inch thickness. Trim to a 12 inch circle and fit in a 9 inch pie plate. Trim even with pie plate. Roll trimmings and cut in sixty 1 inch circles. Arrange overlapping around edge of lined pie plate. Brush with beaten egg white if desired. Prick crust well. Line with foil and fill with raw rice or beans. Bake at 450 degrees for 5 minutes. Remove foil with rice or beans. Bake 5 minutes longer or until golden. Cool in pan on a wire rack.
