Unbaked Fruit Cake
Ingredients
1 lb. graham crackers
1 lb. raisins
2 cups mixed candied fruit
4 cups brazil nuts, filberts or walnut halves
1/4 lb. whole candied red cherries
3/4 cup milk
1 lb. marshmallows
Directions
Crush the graham crackers until finely crumbed. Combine the graham cracker crumbs with the raisins, mixed fruit, nuts and cherries.
Scald the milk in the top of a double boiler, add the marshmallows and heat until they are melted. Pour over the fruit and nut mixture. Mix well with hands.
Line a loaf or tube pan with heavy waxed paper. Wet hands and pack the mixture into the pan. Decorate the top with whole nuts and fruit.
Refrigerate for 24 hours before serving. To store longer, remove the cake from the pans and wrap in heavy foil. Store in refrigerator until used. Yields 6 pounds.
