Unusual Quick Rolls

Ingredients
1 small potato, boiled
1/3 cup shortening
1/4 cup butter
3 tbsp. sugar
1 tbsp. salt
1 cup milk, scalded
1 pkg. or cake yeast
1/4 cup warm water
2 eggs, beaten
1/4 tsp. baking powder
Pinch baking soda
5 or 6 cups sifted flour

Directions
Mash potato and mix with shortening, butter, sugar and salt. Add to scalded milk then cool to lukewarm.

Soften yeast in warm water. Add yeast and eggs to potato mixture. Add baking powder and baking soda to sifted flour and stir into the liquid mixture. Place in a large bowl, cover and let rise in a warm place until it has doubled in size. Replace cover with a damp cloth and refrigerate for 2 hours. Turn onto a lightly floured board, roll out and form or cut into desired shapes. Place on a baking sheet, brush tops with butter and let rise for another 30 to 40 minutes.

Bake at 450 degrees for 20 minutes or until brown.
