Vegetable Soup
Ingredients
1-1/2 lb. lean short ribs
1 large soup bone
2 qt. cold water
2 tsp. salt
3 medium carrots, cut in chunks
1 large onion, chopped
2 leeks, white part only, chopped
2 large zucchini, chopped
2 large yellow crook necked squash, chopped
3 medium tomatoes, cut in wedges
1/4 tsp. basil
1/4 tsp. thyme
1/2 tsp. pepper
sliced mushrooms
salt to taste
Directions
Cook the short ribs and soup bone with salt and cold water for 2 hours. Remove the meat and bone. Cut the lean meat into cubes for soup. Chill the liquid and skim off fat. Heat the liquid to a boil in a large pot.
Add all of the vegetables except the tomatoes to the boiling broth and simmer for 20 minutes. Add the tomatoes, basil, thyme and pepper. Simmer for 5 minutes. Ladle into soup bowls and garnish with mushrooms.
