White Beans Country Style
Ingredients
1 lb. dried white beans
2 tsp. salt
1/2 tsp. pepper
1 clove garlic
1 bay leaf
6 tbsp. butter or margarine
2 medium onions, chopped
1/2 tsp. oregano leaves
1/4 cup chopped parsley
1 green pepper, chopped
3 peeled tomatoes, chopped
Directions
Sort the beans to remove any foreign material. Wash and drain the beans well then place the beans in a large pot. Cover with water and refrigerate overnight.
Bring the beans to a boil, then reduce the heat. Add the salt, pepper, garlic and bay leaf. Cover and simmer for 2 hours or until the beans are tender. Stir now and then during cooking and add water as required.
Meanwhile, heat 4 tablespoonfuls of butter, add the chopped onion and cook for 5 minutes over moderate heat. Stir in the oregano, parsley, green pepper and tomatoes and cook for 5 minutes.
Drain the beans then stir in the vegetable mixture and the remaining 2 tablespoons of butter. Makes 8 to 10 servings.
