White Gingerbread

Ingredients
2 cups sifted flour
1 cup sugar
1/2 cup butter or margarine
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. mace
1/4 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1 egg
1/2 cup buttermilk

Directions
Rub flour, sugar and butter or margarine together until the mixture resembles cornmeal. Add 1/2 teaspoon cinnamon and toss. Set aside 1 cup of this crumbly mixture.

To the remaining crumbly mixture add the other 1/2 teaspoon cinnamon, ginger, mace, salt, baking soda and baking powder. Toss, then add the egg and buttermilk. Beat until smooth.

Sprinkle 1/2 cup of the reserved crumbly mixture in the bottom of an 8x8x2-inch baking pan and spread the batter over it. Sprinkle the remaining crumbly mixture evenly over the top.

Bake at 350 degrees for 35 to 40 minutes.
