Whole Grain Muffins
Ingredients
2 cups whole wheat flour
1 cup whole bran cereal
1/4 cup instant nonfat dry milk
3 tbsp. baking powder
1/4 tsp. salt
1 cup milk
1/3 cup honey
1/4 cup vegetable oil
Directions
Combine flour, bran cereal, dry milk, baking powder and salt in a large bowl. Make a well in center of mixture. Combine milk, honey and oil in a 2 cup measure. Pour into well, then mix just until dry ingredients are moistened. Fill well greased 2-1/2 inch muffin pan cups 2/3 full.
Bake at 400 degrees for 12 minutes or until lightly browned. Remove to wire rack and turn out to cool. Makes about 18 muffins.
