Whole Wheat Banana Bread

Ingredients
1-1/4 cups all-purpose flour
1/2 cup whole wheat flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup sugar
1/4 cup vegetable oil
1 egg
1 cup mashed ripe banana (about 2 medium)
1 tsp. vanilla extract
1/2 cup broken nut meats (optional)
vegetable cooking spray

Directions
Combine flours, baking soda and salt in a small bowl. Stir well and set aside.

Combine sugar and oil in a medium size mixing bowl, then using an electric mixer beat at medium speed for 2 minutes or until well blended. Add egg and beat until light and lemon colored. With mixer running at low speed, add flour mixture alternately with banana, beginning and ending with flour mixture. Blend well after each addition. Stir in vanilla and nuts. Pour batter into an 8x4x2 inch loaf pan coated with cooking spray.

Bake at 350 degrees for 45 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes in pan on a wire rack. Remove from pan and let cool completely on a wire rack.
