Hungarian Goulash

Ingredients
1 tbsp. shortening
1 lb. beef, cubed
1 large onion, chopped
4 cups water
4 carrots, cut in one inch thick slices
4 medium potatoes, cut in one inch cubes
1 cup sliced celery
1 can (1 lb.) tomatoes
1 tsp. whole pepper (white is preferable)
1 tsp. caraway seeds
1/2 tsp. marjoram
1 bay leaf
Salt to taste

Directions
In a large heavy sauce pan, melt the shortening then add the beef and onion. Cook until the beef is browned. Add water and bring to a boil over medium heat. Lower the heat and simmer until the beef is tender.

Add the carrots, potatoes and celery and mix well. Cook until all of the vegetables are tender then stir in the tomatoes and spices. Cook for another 15 minutes. Serves 4.
