Icebox Rolls
Ingredients
1 qt. milk, scalded and cooled
1 cup shortening, can be 1/2 butter and 1/2 oil
1 cup sugar
1 cup mashed potatoes
2 tsp. salt
1 yeast cake
1/4 cup lukewarm water
2 tsp. baking powder
flour as needed to knead
Directions
Note: Allow 3 hours to rise after refrigeration.
Mix shortening, sugar, mashed potatoes and salt with the warm milk then let stand until lukewarm. Dissolve the yeast in warm water then add to the mixture. Add the baking powder, baking soda and enough flour to knead. Let rise until double in bulk, punch down, then let rise again. Place in icebox. Let rise 3 hours after refrigeration. Roll or shape as desired then place on a baking sheet.
Bake at 450 degrees for 20 minutes or until brown.
