Irish Stew

Ingredients
1 tbsp. butter
1 tbsp. olive oil
2 cups thinly sliced carrots
2 cups chopped white onions
1 tsp. finely chopped garlic
1/4 tsp. cayenne pepper
1 tsp. ground cumin
1 tsp. salt
1/2 tsp. ground black pepper
2 cups beef broth
1 cup Guinness stout
1/2 cup tomato paste
4 cups cooked cubed beef
1 tbsp. chopped parsley
1 tbsp. chopped chives

Directions
Heat the butter and oil in a large kettle over medium heat. Add the carrots and onions, then cook until soft, about 5 minutes. Add the garlic and cook, stirring, for 1 minute longer.

Add the cayenne, cumin, salt and pepper. Stir in the broth, Guinness and tomato paste. Simmer for 20 minutes or until the vegetables are tender and the broth begins to thicken.

Add the cubed meat, parsley and chives. Heat thoroughly and serve. Makes 6 servings.
