Lady Baltimore Cake
Ingredients
2-2/3 cups sifted cake flour
1-1/2 cups sugar
4 tsp. baking powder
1/2 tsp. salt
2/3 cup vegetable shortening
1-1/4 cups milk
1 tsp. vanilla
4 egg whites
Lady Baltimore Frosting and Filling (below)
Directions
Grease two 9-inch cake pans. Line the bottoms with waxed paper, then grease the paper.
Combine the flour, sugar, baking powder, salt, shortening, 3/4 cup of the milk and the vanilla in a large bowl. Beat at low speed with an electric mixer until blended, then beat at high speed for 2 minutes. Add the remaining milk and the egg whites and beat for 2 minutes longer. Pour the batter into the prepared pans.
Bake at 350 degrees F. for 30 minutes or until done. Cool on a wire rack for 10 minutes. Invert the cakes, peel off the paper and cool completely.
Fill with Lady Baltimore Filling and frost with Lady Baltimore Frosting. Decorate with fruits and nuts.
Lady Baltimore Frosting
Ingredients
1 cup sugar
1/3 cup light corn syrup
1/4 cup water
1/4 tsp. salt
4 egg whites
1/8 cream of tartar
Directions
Combine the sugar, corn syrup, water and salt in a small saucepan. Cook to 242 degrees F. Beat the egg whites with the cream of tartar in a large bowl until stiff peaks form. Pour the hot syrup into the whites in a thin stream, beating until the frosting is stiff.
Lady Baltimore Filling
Ingredients
2 tbsp. grated orange rind
1/2 cup pecans, chopped
1/3 cup dried figs, chopped
1/3 cup raisins
4 maraschino cherries, chopped
Directions
Stir the grated orange rind, pecans, figs, raisins and cherries into 1-1/2 cups of the frosting.
