Layer Carrot Cake
Ingredients
2 cups dark brown sugar
4 eggs
2 cups flour
2 tsp. baking soda
3/4 tsp. salt
2 tsp. cinnamon
1-1/2 cup salad oil
1 cup chopped walnuts
2 cups carrots, coarsely grated
Directions
Add the brown sugar to the eggs and mix well. Combine the dry ingredients and add alternating with the oil to the egg mixture. Fold in the walnuts and carrots. Pour the cake batter into greased and floured 9-inch layer cake pans.
Bake at 350 degrees for 30 to 40 minutes. Cool for 10 minutes in the pans, then turn out onto a cake rack and cool thoroughly. Frost with your favorite frosting.
