Lemon Cake Top Pudding

Ingredients
1 cup sugar
2 tbsp. flour
1/8 tsp. salt
1/3 cup lemon juice
2 tbsp. grated lemon rind
2 tbsp. butter
1 cup milk
2 eggs, separated

Directions
Blend sugar, flour and salt. Add lemon juice, rind and butter. Slowly add milk and egg yolks. Fold in stiffly beaten egg whites.

Bake like custard at 350 degrees for 35 minutes.
