Lemon Fluff Squares
Crumb Crust
Ingredients
1 cup quick oats, uncooked
1/3 cup flour
1/2 cup brown sugar, firmly packed
1/2 tsp. salt
Filling
Ingredients
1 envelope unflavored gelatin
1/2 cup cold water
4 egg yolks, beaten
1/2 cup sugar
1 tsp. grated lemon rind
1/2 cup lemon juice
4 egg whites
1/2 cup sugar
Directions
Combine the crust ingredients. Toast in a 350 degree preheated oven for about 10 minutes. Cool.
Soften gelatin in cold water. Combine egg yolks, 1/2 cup sugar, lemon rind and juice in a saucepan. Cook over low heat until the mixture boils, stirring constantly. Remove from heat and stir in gelatin until dissolved. Cool thoroughly. Beat egg whites, add 1/2 cup sugar. Gently fold into the cooked mixture.
Pack half of crumbs in bottom of an 8-inch square pan. Pour in filling and sprinkle on rest of crumbs. Chill until set. Cut into 9 squares.
