Lemon Refrigerator Cake

1 large Angel Food cake
2 pkgs. vanilla pudding
1 pkg. lemon flavor gelatin
1 pt. heavy cream, whipped
toasted coconut

Cook the pudding according to the directions on the package. Mix in the lemon flavor gelatin. Allow the mixture to cool then add the whipped cream.

Break half of the cake into bite size pieces and place in a 9x13-inch pan or dish. Cover the cake layer with half of the pudding mixture. Repeat with the remaining half of cake and half of pudding mixture. Chill overnight then top with toasted coconut.

Orange Variation

1/2 large Angel Cake or 1 loaf type
1/4 cup cold water
1 cup orange juice
1 pt. heavy cream
1 tbsp. plain gelatin
1/4 cup boiling water
1 cup sugar

Break the cake into a 9x13-inch pan or dish.

Soak the gelatin in cold water, then dissolve in boiling water. Mix in the orange juice and sugar then blend. Chill until the mixture is slightly thickened. Beat the gelatin mixture and heavy cream separately, then combine together. Pour over the cake and chill overnight. Garnish with cherries or orange slices.
