Maple Butter Crepes

Ingredients
2 eggs
4 tbsp. flour
3 tbsp. butter
3/4 cup cream
dash salt
1/4 tsp. sugar
1/4 tsp. grated lemon peel

Directions
Combine eggs and flour. Melt the butter until simmering and add flour mixture. Combine cream, salt, sugar and lemon peel then add to batter.

Heat a 6 inch skillet until a drop of water skits around the pan. Bake crepes using 2 tablespoons of batter for each crepe until golden on both sides.

Top each with maple butter to serve. Makes 10 to 12 crepes.

Maple Butter

Ingredients
1/2 cup butter
1/4 cup brown sugar
1-1/2 tbsp. confectioner's sugar
3/4 tsp. vanilla

Directions
Combine all in a mixer bowl and blend until fluffy. Serve as topping for crepes.
