Minted Peas with Feta Cheese

Ingredients
1 pkg. (16 oz.) frozen peas
1/3 cup feta cheese, crumbled
1 tbsp. chopped fresh mint
salt to taste
pepper to taste

Directions
In a medium size saucepan, bring about one inch of water to a boil over high heat. Place a steamer basket over the water and place the peas inside. Steam the peas until tender and thoroughly heated.

If desired, you could instead microwave the peas in a large microwave safe bowl with 2 tablespoons of water added. Cover and microwave on high for 3 to 5 minutes, or until the peas are tender.

Drain the peas and toss with the crumbled feta cheese and chopped fresh mint. Season to taste with salt and pepper. Makes 5 servings.
