Minted Pineapple Mold

Ingredients
1 envelope unflavored gelatin
1 can (20 oz.) crushed pineapple
1/3 cup mint flavored apple jelly
1 tsp. confectioner's sugar
1 cup heavy cream
fresh mint

Directions
Put the gelatin and 1/2 cup syrup from the pineapple into a saucepan. Place over low heat, stirring constantly, until gelatin is completely dissolved. Remove from heat and add the jelly, then stir until melted. Add the pineapple and any remaining syrup. Chill until mixture mounds slightly when dropped from a spoon.

Add sugar to the heavy cream and beat until stiff. Fold into the gelatin mixture. Turn into a 5-cup mold and chill until firm. Unmold to serve and garnish with fresh mint. Serves 6 to 8.
