Mocha Nut Logs
Ingredients
1 cup light brown sugar, firmly packed
1/3 cup evaporated milk
2 tbsp. light corn syrup
1 package (6 oz.) chocolate bits
1 tsp. instant coffee
2 tsp. vanilla
1 cup chopped walnuts
Directions
Combine sugar, syrup and milk in a heavy 1 quart pan. Bring to a full boil and boil for 2 minutes, stirring constantly. Remove from heat and add the chocolate bits, coffee and vanilla. Stir until the chocolate melts. Beat until the mixture is thick and smooth, then add the walnuts.
Make two rolls 10 inches long and wrap each in waxed paper. Chill for 2 hours then slice to serve. Yield is about 20 slices.
