No-Roll Sugar Cookies
Ingredients
1 cup sugar
1 cup powdered sugar
1 cup butter or margarine, softened
1 cup vegetable oil
1 tsp. vanilla extract
2 eggs
1-1/4 cup all-purpose flour
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. salt
Directions
Preheat oven to 375 degrees F.
In a large mixing bowl, combine the sugar, powdered sugar and butter. Beat until light and fluffy. Add the oil, vanilla and eggs then blend well. Add the flour, baking soda, cream of tartar and salt to the mixture, one cup at a time, and mix well. Cover the dough with plastic wrap and refrigerate for at least 2 hours or overnight.
Shape the dough into 1-inch balls. Place the balls 2 inches apart on an ungreased baking sheet. Flatten each ball with the bottom of a glass that has been dipped in sugar.
Bake for 5 to 8 minutes, or until the cookies are set but not brown. Immediately remove the cookies from the baking sheet. Makes about 10 dozen cookies.
