Old Fashioned Mashed Potatoes

Ingredients
2 slices white bread, cubed
1/2 onion, minced
8 medium potatoes
1 tbsp. chopped parsley
1 egg
milk as needed
butter as needed
salt and pepper to taste

Directions
Brown the bread cubes in butter and remove from skillet. Add the minced onions to the skillet and cook until soft but not brown. Cook potatoes as for usual mashed potatoes by simmering in hot water until tender.

Mash potatoes and add milk, butter, salt and pepper as needed to make fluffy, well seasoned mashed potatoes. Beat in the parsley and egg. Fold in the bread cubes and onion.

Serves 6 to 8.
