Orange Fruit Cake

Ingredients
2 cups sugar
2 sticks butter
4 eggs
1 tsp. vanilla
3 cups sifted flour
2 tsp. baking powder
2 tbsp. orange juice
2 tbsp. grated orange rind
1 package (8 oz.) chopped dates
1 cup chopped nuts
coconut, flaked or shredded

Directions
Cream the sugar and butter together. Add the eggs and beat well. Add the remaining ingredients and mix well. Pour the batter into a round angel cake pan.

Bake at 300 degrees for 2 hours.

Turn cake out of the pan and upside down onto a plate. While the cake is still hot, sprinkle coconut over the top of the cake. Pour the orange icing over the warm cake. The longer this cake stands, the better it gets.

Orange Icing

Ingredients
1 tbsp. butter
2 cups powdered sugar
1 cup orange juice, heated
1 tsp. grated orange rind

Directions
Combine and mix the icing ingredients together until smooth. Makes a thin icing.
