Orange Zucchini Cake

Ingredients
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
3/4 cup sugar
1/2 cup vegetable oil
2 eggs
1/2 cup bran cereal
1-1/2 tsp. grated orange peel
1 tsp. vanilla extract
1 cup grated zucchini
1/2 cup chopped nuts

Directions
Combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.

In a large mixing bowl, beat the sugar, oil and eggs together until well combined. Stir in the cereal, orange peel and vanilla. Add the flour mixture, zucchini and nuts. Mix well. Spread the batter evenly in a greased 10x6x2-inch glass baking dish.

Bake at 325 degrees F. for 35 minutes or until a wooden toothpick inserted in the center comes out clean. Cool completely before frosting with Orange Cream Cheese Frosting or your frosting of choice.
