Oriental Shrimp and Vegetables
Ingredients
2 tbsp. butter or margarine
4 green onions, sliced
1 tbsp. cornstarch
1/4 cup soy sauce
1 can (8 oz.) water chestnuts, drained and sliced
1 can (8 oz.) bamboo shoots, drained
1 can (4 oz.) mushroom pieces, drained
1 envelope instant chicken broth
1/4 tsp. ground ginger
1 lb. frozen shelled and deveined shrimp
1 pkg. (6 oz.) frozen snow peas
Directions
Combine the butter and onions in a 2 quart glass casserole. Cook uncovered in a microwave oven for 2 to 3 minutes, or until bubbly.
Combine cornstarch and soy sauce. Stir into the casserole dish along with the water chestnuts, bamboo shoots, mushrooms, chicken broth, ginger and shrimp.
Cook, covered, in the microwave for 8 minutes. Stir in the snow peas and cook covered 3 to 4 minutes longer or until the mixture boils and the shrimp are firm. Serve over hot cooked rice if desired. Serves 6.
