Parmesan Rutabaga

Ingredients
1-1/2 lbs. rutabaga, peeled and cut up
water
salt
2 tbsp. butter or margarine
2 tbsp. grated Parmesan cheese
1/2 tsp. sugar
1/8 tsp. pepper

Directions
Cover and cook the rutabaga in 1 inch of boiling water with 1/2 teaspoon salt for 20 minutes or until very tender. Drain well. Add butter to melt.

Using an electric mixer, beat the buttered rutabaga, 1/2 teaspoon salt and the remaining ingredients until smooth. Sprinkle additional Parmesan cheese over the top if desired. Serves 4.
