Paximadia, a Toasted Cookie
Ingredients
1/4 cup butter
1/4 cup vegetable oil
1/2 cup sugar
1-1/2 eggs
1/2 tsp. baking soda
1-1/2 tsp. baking powder
1 tsp. anise (optional)
1/4 cup finely chopped walnuts
2-1/2 cups sifted flour
1/2 egg
1/2 tbsp. milk
sesame seeds
Directions
Using an electric mixer, beat the butter and oil until blended. Add the sugar and mix well. Add the 1-1/2 eggs then beat until light and creamy. Stir in the baking soda, baking powder and anise. Stir in the walnuts then gradually add the flour. Knead until a soft dough is formed.
Divide the dough into 3 sections. Shape each section into a long, narrow, flat loaf that is about 2-1/2 inches wide and 1 inch high. Place the loaves 2 inches apart on an ungreased baking sheet. Cut the loaves diagonally into 1/3 inch slices but maintain the loaf shape. Combine the 1/2 egg and milk in a bowl. Brush the loaves with the mixture then sprinkle with sesame seeds.
Bake at 375 degrees F for 20 minutes, or until slightly browned.
Remove from the oven and slice again through the original cuts while still warm. Cool slightly then turn the slices on their sides and return to the oven. Toast on each side until lightly browned. Remove from the oven and cool on wire racks. Allow to cool completely before storing in a covered container. Makes 4 to 5 dozen cookies.
