Peachy Chicken
Ingredients
3 chicken breasts, halved
1/2 cup flour
salt and pepper
2 tbsp. butter
2 tbsp. vegetable oil
1-1/2 cups orange juice
2 tbsp. cider vinegar
2 tbsp. brown sugar
1 tsp. basil
1/2 tsp. nutmeg
1 can (16 oz.) peach halves, drained
Directions
Shake the chicken pieces in a bag with the flour and salt and pepper to taste. Brown the chicken pieces in the butter and vegetable oil. Place the browned pieces of chicken in a greased 3-quart casserole dish.
Combine the orange juice with the vinegar, sugar, basil and nutmeg. Pour over the chicken.
Cover and bake at 375 degrees F. for 1 hour 15 minutes or until tender. Baste often while baking. Place the peach halves between the chicken pieces and baste well. Bake uncovered for another 15 minutes. Makes 6 servings.
