Pennsylvania Pepper Cabbage
Ingredients
1 small head green cabbage, grated (7 cups)
1 medium green pepper, cut in thin strips
salt
1 egg, beaten
1 tbsp. sugar
dash of pepper
1/4 cup cider vinegar
Directions
In a 3 quart pan toss the cabbage and green pepper. Sprinkle lightly with salt. Over low heat, steam for 15 to 18 minutes, or until tender.
In a small bowl combine the salt, beaten egg, sugar, pepper and cider vinegar. Beat well. Add to the cabbage mixture and heat slowly for 5 minutes while stirring constantly.
