Potato Chocolate Caramel Cake
Ingredients
2/3 cup butter
2 cups sugar
1 cup hot mashed potatoes, unseasoned
2 squares chocolate, melted
4 eggs, well beaten
2 cups flour, sifted
3 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. cloves
3/4 cup milk
1 cup chopped nuts, rolled in flour
1 tsp. vanilla
Directions
Cream the butter and add the sugar gradually, creaming together thoroughly.
Combine the hot mashed potatoes, melted chocolate and well beaten eggs. Add to the creamed mixture and blend well.
Sift the flour with the baking powder, cinnamon, nutmeg and cloves. Add to the potato mixture alternately with the milk. Stir well after each addition.
Add the flour-covered nuts and the vanilla. Pour the batter into 3 greased 8-inch pans.
Bake at 325 degrees for 40 minutes. Cool for 5 minutes in the pans, then turn the cake layers out onto a rack to completely cool. Frost when cool with a butter cream frosting.
