Potato Pancakes #2

Ingredients
2 lbs. potatoes
2 tbsp. onion, finely chopped
2 tbsp. flour
2 eggs, beaten
1-1/2 tsp. salt
1/4 tsp. pepper
1-1/2 tsp. baking powder
2 tbsp. parsley, fresh and finely chopped
3-4 tbsp. butter or margarine

Directions
Wash and peel potatoes, then cover with cold water. Drain. Grate and put into a cheesecloth-lined sieve and press out liquid. Turn into a dry bowl, then quickly add onion, flour, eggs, salt, pepper, baking powder and parsley. Mix well.

Heat enough butter in a skillet to coat it well and drop potato mixture by spoonfuls into the hot skillet. Flatten slightly and saute slowly until crisp and golden on both sides. Drain on paper towels and keep in a warm oven while cooking more. Serves 6.
