Pumpkin Nut Cookies
Ingredients
1/2 cup shortening
1 cup sugar
2 eggs, beaten
1 cup canned pumpkin
2 cups sifted all-purpose flour
4 tsp. baking powder
1 tsp. salt
2-1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 cup raisins
1 cup chopped nuts
Directions
Cream shortening with gradual additions of sugar until light and fluffy. Add eggs and pumpkin. Mix well. Sift flour, baking powder, salt and spices together. Stir dry ingredients into the creamed mixture and mix until blended. Add raisins and nuts. Drop by teaspoonfuls onto greased cookie sheets.
Bake at 350 degrees for 15 minutes. Makes about 4 dozen cookies.
