Quiche Lorraine
Ingredients
1 unbaked pastry shell, chilled
6 slices bacon
1-1/2 cups natural Swiss cheese, shredded
3 eggs
1-1/2 cups cream
3/4 tsp. salt
1/8 tsp. pepper
1 tsp. Worcestershire Sauce
Directions
Do not pierce the pie shell before filling.
Cut the bacon slices into small pieces and cook slowly until they are brown and crisp. Drain well on a paper towel. Spread the bacon and cheese evenly over the bottom of the pie shell.
Beat the eggs and add the cream and seasonings, then slowly pour into the pie shell.
Bake at 400 degrees for 10 minutes, then reduce the heat to 300 degrees and bake for 30 minutes or until a knife inserted in the center comes out clean. Allow the pie to stand 5 to 10 minutes before serving. Serve warm, makes 6 servings.
