Quick and Easy Pasta

Ingredients
1 pkg. (1 lb.) linguine
1/2 cup extra-virgin olive oil
1 large shallot, sliced
3 cloves garlic, minced
1/4 lb. prosciutto, chopped
juice of 1 lemon
1 cup basil, chopped
pepper, to taste
1 cup cream (half-and-half)
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped

Directions
Cook the linguine according to the directions on the package until al dente, about 5 minutes.

While the pasta cooks, heat the olive oil in a large skillet. Add the shallots and garlic and cook for 2 to 4 minutes. Add the prosciutto and cook for 4 minutes more. Add the lemon juice and cook for another 1 to 2 minutes. Add the basil, pepper and cream. Cook to reduce the volume of the sauce, about 2 to 3 minutes. Stir in the Parmesan cheese.

Drain the pasta, toss with the sauce and parsley then serve. Serves 4.
