Rumaki

Ingredients
1 lb. fresh chicken livers
1 can (12 oz.) water chestnuts
1 lb. bacon
1 tsp. anise seed
2 bay leaves
3 tbsp. brown sugar
1-1/2 tsp. salt
1 tbsp. kitchen bouquet

Directions
Boil chicken livers and spices for 45 minutes. Drain. Cut the chicken livers into small chunks. Cut the water chestnuts into chunks about the same size as the chicken liver chunks. Wrap a piece of chicken liver and a piece of water chestnut with 1/2 strip of bacon and skewer with a toothpick.

Deep fry in 400 degree vegetable oil until the bacon is fully cooked. Remove from oil, drain and serve.
