Salmon Loaf
Ingredients
1 can (1 lb.) salmon
1 cup dry bread crumbs
1/2 cup finely chopped celery
1 egg, slightly beaten
3/4 tsp. salt
1 tbsp. lemon juice
2 tbsp. butter
2 tbsp. flour
1-1/2 cups milk
Directions
Preheat oven to 325 degrees F.
Combine the salmon with the bread crumbs, celery, egg, salt and lemon juice. Mix lightly.
In a saucepan melt the butter. Blend flour into the butter. Add the milk gradually, stirring constantly. Cook until the mixture is thickened and smooth. Blend this white sauce into the salmon mixture. Transfer into a greased 9x5x3-inch loaf pan.
Bake at 325 degrees F. for 60 minutes. Makes 6 servings.
