Saucy Cabbage
Ingredients
1 head cabbage, cut in wedges and cooked
3/4 cup ripe olives
1 tbsp. oil
1/3 cup chopped onion
1/4 cup chopped green pepper
1 can (1 lb.) tomatoes
1/2 tsp. salt
pepper
dash of cayenne pepper
Directions
Cut the cabbage into wedges and cook in water until tender. Cut olives into wedges. Chop the onion and green pepper into small pieces.
Heat the oil and add the onion and green pepper pieces. Saute until the onion and green pepper pieces are tender yet crisp. Add the can of tomatoes and the seasonings. Stir then simmer uncovered for 5 minutes. Stir in the olive wedges and serve over the cooked cabbage wedges.
