Seafoam (an Old Fashioned Candy)
Ingredients
3 cups light brown sugar
1 cup water
1 tbsp. vinegar
2 eggs whites
1/8 tsp. salt
1 tsp. vanilla
1 cup broken nut meats
Directions
Mix sugar, water and vinegar in a sauce pan and place over low heat. Stir until the sugar dissolves. Cook to soft ball stage (238 degrees).
Beat the egg whites and salt until stiff. Pour the syrup over the egg whites in a thin stream, beating constantly. Place the bowl over (not in) boiling water and beat until the mixture is thick and creamy. Add the vanilla and nuts. Pour into an oiled or buttered platter. Cut into squares while still hot.
