Sesame Chicken
Ingredients
1 broiler-fryer chicken, 2 to 2-1/2 pound
salt, pepper, flour
2 eggs, beaten
2 tbsp. milk
1 cup flour
1/2 cup sesame seeds
1/2 tsp. salt
1/4 tsp. pepper
peanut oil
Directions
Dust the chicken in flour mixed with salt and pepper.
Mix flour, sesame seeds, salt and pepper together. Mix the eggs with milk. Dip the chicken in the egg-milk mixture, then roll in the flour mixture.
Deep fry the chicken until tender in peanut oil that has been heated to 350 degrees. Serve with light cream sauce (below).
Light Cream Sauce
Ingredients
4 tbsp. butter
4 tbsp. flour
1/2 cup cream
1 cup rich chicken stock
1/2 cup heavy cream
1/2 tsp. onion salt
Directions
Melt the butter in a double boiler then add the flour. Cook and stir over low heat for several minutes. Mix the remaining ingredients together and add. Cook over hot water in a double boiler for 15 to 20 minutes.
