Snickerdoodles
Ingredients
1 pkg. (18 oz.) refrigerated sugar cookie dough, at room temperature
2 oz. cream cheese, softened
1/2 cup powdered sugar
1 tsp. vanilla or almond extract
1/2 cup granulated sugar
1/4 tsp. ground cinnamon
Directions
Preheat oven to 350 degrees F.
Cut the cookie dough into 8 chunks. In the bowl of an electric mixer, combine the cookie dough chunks and the cream cheese. Mix in the powdered sugar and vanilla or almond extract until the dough is smooth.
Using a tablespoon, scoop out the dough and roll into balls. You should have about 36 balls.
In a small mixing bowl, combine the granulated sugar and cinnamon. Roll the balls in the cinnamon-sugar mixture and place the balls 2-inches apart on an ungreased cookie sheet.
Bake at 350 degrees F. for 10 minutes, or until the edges of the cookies are a light golden brown. Remove to a wire rack to cool. Makes 3 dozen cookies.
