Southern Banana Pudding

Ingredients
1 pkg. (4 serving size) vanilla flavor pudding and pie filling
2 egg yolks, slightly beaten
2-1/2 cups milk
25 vanilla wafers
2 large bananas, sliced
2 egg whites
dash salt
1/4 cup sugar

Directions
Combine the pudding mix, egg yolks and milk in a saucepan. Cook and stir over medium heat until the mixture comes to a full boil. Remove from heat.

Arrange a layer of wafers on the bottom and sides of a 1-1/2 quart baking dish.

Add a layer of banana slices and a layer of pudding. Repeat the layers.

Beat the egg whites with the salt until foamy. Gradually beat in the sugar and continue to beat until the mixture forms stiff, shiny peaks. Pile lightly on top of the pudding, sealing the edges well.

Bake at 425 degrees F. for 5 to 10 minutes, or until lightly browned. Serve warm or chilled. Garnish with additional banana slices if desired, and serve immediately. Makes 8 servings.
