Southern Style Summer Squash

Ingredients
4 tbsp. butter or margarine
1 medium onion, sliced thin
4 small yellow squash
4 small zucchini
1 tsp. salt
1/2 tsp. pepper

Directions
Melt the butter or margarine in a large skillet over medium-high heat. Add the onion slices evenly over the bottom of the pan. Cook for 10 minutes, stirring, until the onion is soft but not browned.

While the onion slices are cooking, trim and slice the squashes into 1/2-thick pieces.

Add the squash pieces to the onion along with the salt and pepper. Cook over medium-high heat, stirring occasionally, until the squash falls apart and is very tender, about 20 minutes.

Serve with cornbread, sliced tomatoes and lima beans if desired. Makes 4 servings.
